Don’t let this super fun photo shoot fool you! I’m not a chef and these recipes I’m about to share with you are not meals made from scratch. This recipe book you see in these photos was given to me by my mom, that my grandma gave her. It means so much to me, and I do cook from it, but those recipes are for a different day. (If you ever need the perfect pie crust recipe, message me. My mom’s crust is incredible and she makes it from scratch!)
These recipes I’m about to share with you are for the times where you have worked a long day, or have dealt with everything life can throw your way, and you need an easy meal that isn’t from a drive through.
Five Cheese Tortellini & Kielbasa sausage
Over the weekend I bought Five Cheese Tortellini Pasta and Kielbasa Sausage from Costco. The Pasta only takes two minutes to cook after you boil water. I cut up the sausage, cooked in on the stove top, and added it to the pasta. Took me a total of 30 minutes and it was wonderful! You can make this with any pasta. I have done this in the past with bow tie pasta and added olive oil and salt, it was tasty!
Sausage Wraps & Baked Beans
All you need for this is smoked sausage (my favorite is Meyers), mustard, tortillas, and a can of your favorite baked beans. This is not the healthiest meal ever, but boy does it taste good! Cook your sausage on the grill or on the stove top, throw your tortillas in the microwave, and while your cooking the sausage, put your beans on the stove. When you are finished, put your sausage in your tortilla, and top it with mustard and then your sausage wrap is complete! This takes me about 20-30 mins!
Salmon, Broccoli & Rice
Salmon is one of my favorite foods! I could eat it every day for the rest of my life and I’d be a happy camper! I only have to cook for my hubby, so that makes cooking fast, but sometimes it’s hard only cooking for two.
For this meal you can buy the bagged broccoli that is already cut up to make cooking faster, or you can buy the whole thing and cut it up yourself. I cut up the brocoli, add olive oil and sea salt. I cook two pieces of salmon for 20 mins at 400 degrees. I add olive oil, salt and a choice of herbs. I cook the brocoli and salmon at the same time, to save time. Keep an eye on your brocoli so it doesn’t burn. For the rice, I buy the organic ready to go rice that serves two people. You put in the microwave for two minutes and it is ready! With prep time and cook time, this takes about 40 mins.
So, this is something I make when we are close to needing to go grocery shopping, or when I need some comfort food. What you will need is, ground turkey, corn, canned green chilies and tomatoes, olives, taco seasoning and Mexican cheese. Cook the ground turkey in a pan, put the heat on medium. Once your ground turkey is almost done, add your desired amount of taco seasoning, the canned green chilies, tomatoes, and corn. Let it cook together until the meat is fully cooked. All of this is done in the same pan, less dishes to clean! Take the pan of the burner and add your desired amount of shredded cheese, and top it with chopped up black olives. You can eat this with tortillas, chips, or just by itself. This is one of my favorites to make because it has so much flavor and takes me 20 minutes!
Here is my home-made taco seasoning recipe:
- 4 tablespoons chili powder
- 2 teaspoons paprika
- 5 teaspoons ground cumin
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon crushed chili flakes
- 1 teaspoon dried oregano
- 4 teaspoons sea salt
- 2 teaspoons black pepper
Mix it together in a jar or zip lock bag.
